It is an enormous amount work by a formidable team, and as Christmas Eve draws nearer, the language gets a bit bluer, the caffiene flows pretty freely, the jokes certainly get dirtier, and there is a strange air of insane hilarity in the butchery. By Christmas Eve, they have pretty much forgotten what the outside world looks like in daylight...
But it is very rewarding to see the satisfaction on everyone's face when the collection of around 700 birds runs smoothly, with no long queues.
Once the big chiller lorry and the birds arrive, they are weighed, prepared and allocated according to each order and a ticket number is given. When you arrive to collect your bird, you will be given this ticket number. You will then be handed your bird by Giles, or Jake now he's big enough to lift a whole turkey (start 'em young...) quite literally off the back of a lorry!
It is a delightfully easy system that means long queues at the butchery are avoided, as well as a lot of stress (unless you're Pete!).
If you haven't yet ordered your turkey, don't panic, we have plenty on hand for those last minute customers! Traditional white, free range and organic locally-reared turkeys are still available.
